We used single infusion mashes to produce fermentatble worts

and one quarter of those are from our own Brabant farmers’ collective

The slow spontaneous fermentations took place in an old white Burgundy barrique and a fresh Herefordshire cider barrel

Adam and Blaise from The French joined us in the barrel store and together we came up with a blend of amber and rye wild ales designed to pair perfectly with their menu
